Quick and Easy Curry

Ingredients:
1 medium onion finely diced
2 garlic cloves crushed
2-3 medium waxy potatoes cubed
1 can (~15 oz) garbanzo beans including liquid
4 teaspoons curry powder
1 teaspoon lemon juice
1 tablespoon parsley finely diced
1 1/4 cup water
1 tsp salt
enough oil for sauteeing the onion

Preparation:
Sautee the onion in a wide, moderately deep pan for about 4 minutes until starting to brown.  Throw in the garlic and sautee for another minute.
Add the garbanzo beans, the potatoes, the curry powder, the parsley and salt and just barely cover with water, about 1 1/4 cup should do.  Bring to a boil and reduce to a simmer.  Let simmer with a lid on for about 30 minutes, stirring occasionally.  When the 30 minutes are up add the lemon juice and serve with some sort of absorbent grain-based product.

how ironic - I have been making shrimp curry at home every week for the past 3 weeks.

I am using a curry paste instead of powder - I sautee’ it with tomatoes, green pepper, garlic, and ginger , then I add in the shrimp.
