Fra' Mani Meats

Wally’s Wine & Spirits is proud to carry gourmet meats from Fra’ Mani. Paul Bertolli, of Chez Panisse fame, opened Fra' Mani Handcrafted Salumi, in March of 2006 ('Fra Mani' is Italian for 'between hands') with his sole goal being the creation of the finest cured meats available anywhere.. Paul began his obsession with salumi as a child when he tasted foods from his Grandfather’s butcher shop. His passion continues to this day, with Fra’ Mani – carried at a small number of specialty shops. We are proud to carry his Rosa Salame, Salame Gentile, Soppressata and Mortadella. These are fantastic alone, or with cheeses, olives and other antipasti – and of course they are unbelievably good in sandwiches – layered on a crusty Italian roll. Somebody please make me stop this. From Paul’s website: “Our mission is crafting salumi in the finest Italian pastoral traditions, using the highest-quality, all-natural pork. Our pork comes from family farmers committed to the well-being of their animals and their land. The hogs are never given antibiotics, artificial growth hormones, growth-promoting agents or meat by-products. They eat only the finest grains and natural feed. This old-fashioned way to raise hogs produces pork of outstanding quality, which is the essential ingredient in all Fra' Mani salumi”.
